Bobó de Camarão

It's been a while since I last shared a typical Brazilian recipe in my blog, but it's never too late to make things right. I recently craved for this dish and, as I was preparing it, I took some pictures, which I think are perfect for a Photo-Story type of recipe.
The "Bobó de Camarão" is an Afro-Brazilian recipe that is, for some reason, not internationally famous and, not found in any restaurant around you, unless you live in Brazil. That intrigues me since the main ingredients for that are easily found anywhere: shrimp, coconut milk, palm oil, cassava (Yuca), ...
The recipe is simple, yet laborious. In the nutshell, cook the yuca in water and salt until it is creamy soft. Let it cool and remove the hard fiber located at its center.

Next, add to it a can of coconut milk and mash the yuca (if you prefer use a blender of food processor).


In a large pot, brown some onions. Then, add cubed tomatoes, and a pinch of salt and black pepper to taste. Let it cook for a little. Add a couple of soup spoons of palm oil and some more coconut milk (maybe half a can). Let it cook a little more on low heat. Sorry, I am not very scientific here, but use your common sense as if you were cooking some home stew.




The time has come to add some large shrimps previously peeled and gutted.


Add some chopped parsley and green onions. Let it cook for another 5 minutes or so.

The grand finale, serve over white rice and some hot sauce. Simple as that.
